Maitake Mushroom found in Old Growth Forest

Prime Maitake!

This is one of the first Maitake mushrooms I ever found. My wife and I were walking through the woods close to our house and ahead on the trail I saw what looked like destroyed pieces of Maitake mushroom. I though, “Well, either a deer got that one or some little boy stumbled upon it and did what little boys like to do. That is shame, looks like it was in good shape.” But then I though, “Where there is one, there is likely more.” So I walked off the trail and came around to the sunny side of this old growth tree and sure enough! A beautiful Maitake Mushroom. My wife tells people I look happier in this photo than any of our wedding photos. Between me and you, I was pretty happy to find it!

You can see in the photo it really is in prime condition. I always take them home and cook them immediately, then cryovac them and freeze them to use later on. It is a really delicious mushroom. The only mushrooms I like even better are Morels. For me, as a chef, a Morel can’t be beat.
